  • Iced Berries with Hot White Chocolate Sauce

    Serves 4

    Ingredients

    • 330g British Summer Fruits frozen
    • 142ml double cream
    • 140g white chocolate

    Total time required: 15 minutes

    Preparation time: 15 minutes

    Method

    1. Pour the cream into a small saucepan and break in the chocolate. Heat gently, stirring continuously until the chocolate melts into a smooth sauce.
    2. Scatter the frozen berries on 4 dessert plates or shallow bowls. Pour the hot chocolate sauce over the fruits and serve immediately.

    Ingredients

    Blackcurrant coulis

    •             400g British (Organic) Blackcurrants frozen
    •             140g caster sugar
    •             100ml water

    Raspberry coulis

    •             300g British Raspberries frozen
    •             50g sugar        
    •             100ml water

    Blackberry coulis

    •             350g British IQF / Puree/Juicing Blackberries frozen
    •             70g sugar
    •             100ml water

    Summer fruit coulis

    •             350g British Summer Fruits frozen
    •             70g sugar
    •             100ml water

  • Summer Fruit Pudding

    Serves 8

    Ingredients

    • 330g British Summer Fruits
    • 75ml Water
    • 50g Sugar
    • Thin slices of white bread, crusts removed.

    You will also need a small pudding basin, lightly buttered.

    Total time required: 30 minutes

    Preparation time: 20 minutes
    Cooking time: 3 hours (ideally overnight)

    Method

    1. Place the fruits, water and sugar in a saucepan and simmer until the sugar dissolved and the juices begin to run (roughly 3 – 5 minutes)
    2. Line the pudding basin with slices of bread, overlapping them and sealing well by pressing the edges together – ensuring there are no gaps.
    3. Pour in the fruit and juice, reserving some for decoration. Cover the pudding with another slice of bread. Place a small saucer (that fits inside the bowl
